ENATE CHARDONNAY 234 (Somontano)

The harvest of Enate Chardonnay 234 is nocturnal, once it arrives at the winery the grapes are slightly squeezed and introduced into a pneumatic press where it remains for five hours doing a film maceration. Solid residues are removed by natural decanting at 10oC and the must is fermented in stainless steel tanks with selected yeasts and controlled temperature, 16oC. Before bottling the wine is clarified, stabilized and filtered, resting for 6 months to go on the market.

Before bottling the wine is clarified, stabilized and filtered, resting for 6 months to go on the market. A white wine made with 100% Chardonay 234. It has a pale yellow colour with glaucous reflections. Complex and intense varietal aroma of green apple, ripe peach, fennel and exotic fruits (guava, passion fruit), on a discreet mineral background. Wide, oily palate with a clean and fresh pace thanks to its sustained acidity. Slightly syrupy aftertaste. Alcohol content: 13.5 % vol. Serving temperature: 10o C.Pairing: Pasta with fish sauce, grilled seafood, smoked salmon, appetizer, soft starters, grilled white fish, soft pasta cheeses, brothed rice dishes.
