It is the result of a brainstrorming by members of amadip.esment to name the wine. When asked why they had chosen this name their answer was clear: the hens are funny and the seals clap. At the same time they were asked to draw drawings of hens and seals that would later serve to illustrate the wine label. For 12 months in 500 litre Allier oak barrels. For 6 months in 4000 litre French roure foudre. 6 months aging in bottle. Rational viticulture and minimal intervention.
