Lustau P.X. San Emilio is a wine made from pedro ximénez grapes with a special process, with sunny to become raisins. Fermentation is stopped, in order to preserve the natural sugar of the grapes. The wine is then fortified and aged by the system of solera and criaderas. Already in the winery, after a partial fermentation of the must, it undergoes an oxidative ageing in American oak boots, following the traditional system of solera and criaderas.
