Monroy blanco is a young white wine matured on the lees. After destemming and crushing, a rapid cold pre-fermentation maceration is carried out, followed by bleeding to separate the yolk must. Long alcoholic fermentation in small concrete tanks at a very low temperature (12-14ºC). After fermentation, the wine matures for 80 days on its fine lees, combining very well with fresh cheeses, white fish, seafood, sushi and seafood rice.
