Close to the coast, between the towns of Sanlúcar and Chipiona, is the Las Cruces vineyard. Its sandy soils bear fruit, among other varieties, muscat grapes and pedro ximénez, so appreciated in the production of sweet wines. Sherry has a unique characteristic by which it takes the properties of wine with more old age once combined with it. The wine pulls for expedition come from the solera, and this same amount must be replaced with younger wine from the first vine. In turn, it will be replaced with that of the second school, which will be filled with wine of the year called ‘overtable’. In this way, each wine boot is “sprayed” at least three times a year.
