Cold pre-maceration for 4 days. Alcoholic fermentation with indigenous yeasts and controlled temperature between 15-22o C. Selection table. Grape with scrape 70 % and destemmed 30 %. Maceration between 20 and 30 days depending on plots and deposits. Soft extractions come back and delastage.

Sotorrondero is the name of a place located in the village of Méntrida where its producers have one of its farms. The Jiménez Landi wineries year after year and wine after wine are enchanting us, and we like them a little more and more, if possible. Our passion for its wines has led us to launch in our winelovers club, Wineissocial its new vintage of the Sotorrondero, and happy for it, we want to know more about your project, the Jiménez Landi wineries, and share this knowledge with you. We have been able to talk to José Benavides Jiménez Landi for a little while and we want to share your interesting opinions. It is a high expression wine clean to the eye, half layer and with good tears, and on the nose is rich in fruity aromas. Wake up in the glass with aromas of sweet treats that quickly refresh and lighten, highlighting ripe red fruit and some black (blueberries, raspberries, ripe plums) and notes of violets, vegetables, bakery, tobacco and balsamic. The set is sweet but also wild, fresh, soft and appetizing. Alcohol content: 14 % vol. Serving temperature: 16-17o C.Pairing: Cakes with nuts, stews, stewed legumes, pepper steak, rabbit paella.
