Low temperature alcoholic and malolactic fermentation carried out under controlled conditions. 12 months of aging in French oak barrels of 225 L. Viticulture and Water Regime: glasses grown in dry land on sandy, poor and siliceous soils. Yields less than 2,000 Kg / Ha. The Syrah and Tempranillo come from trellised vineyards. The varieties used are: 90% Garnacha from our vines over 80 years old, 5% from Syrah and 5% from Tempranillo from the El Repiso plot. Climate: continental Mediterranean under the influence of the Alberche River basin and the Central System Pairing: due to its structure, length and freshness it combines very well with a great variety of dishes and stews: stews, cheeks, oxtail, legumes, croquettes of boletus, roasted meats and cheeses of a certain intensity. Service Temperature: 15-16ºC.
